Mango Sweet Recipe


Mango sweet recipe : mango coconut burfi

1½ cups Coconut, grated
1 Mango, pulp
1/2 cup Milk
1/3 cup Sugar
1/4 teaspoon Cardamom Powder (Elaichi)
5-6 Pistachios (Pista), chopped

METHOD
.Take a tray and grease it with ghee or butter. Keep it aside.

.Next, heat a pan over medium flame and add coconut to it.
.Stir continuously until it becomes dry, lightly brown and fragrant.
.Now, add milk, sugar and mango pulp. Mix it and keep stirring till it dries out and becomes thick (For around 18-20 minutes).
.Turn off the flame, add cardamom powder and mix well.
.Transfer the mixture to the greased tray and spread it evenly.
.Sprinkle a few chopped pistachios on the top.
.Let it cool. Once it cools down and sets, cut it into pieces.

2½ cups Milk
3 Mangoes, pulp
1 cup Basmati Rice
3 tablespoons Sugar
A pinch of Saffron (Kesar)
7-8 Almonds, chopped
10-15 Raisins (Kishmish)
Mint Leaves, a bunch
3-4 Green Cardamom (Elaichi)
5-8 Pistachios (Pista), chopped


METHOD
.Take a deep pan, add milk, rice and sugar to it.
.Stir cook the mixture over a medium flame for a minute. Then, add saffron to it.
.Once it comes to a boil, add the mango puree.
.Sprinkle some almonds, raisins and add fresh mint leaves to it. Give a gentle stir and cover with a lid.
.Once the rice is cooked and the kheer is creamy and thick.
.Add green cardamom and again give a gentle stir.
.Remove from the flame and keep it aside to cool down.
.Top with some chopped almonds, pistachios and a few saffron strands. Serve chilled.

2½ cups Mango, chopped
1 cup Greek Yogurt
3 tablespoons Honey
3/4 teaspoon Cardamom Powder (Elaichi Powder)
1 teaspoon Lime Juice
A pinch Salt
1/2 cup Water

METHOD
.Add all the ingredients to a blender and blend them until smooth.
.Fill the Popsicle molds with the mixture and freeze it for an hour.
.Post 1 hour, transfer the Popsicle to a plate. Freeze it for another 4-5 hours until firm. Relish chilled.

METHOD
.Add the chopped mango pieces to a blender. Blend it into a smooth puree and transfer it to a bowl.
.Take another bowl and pour the cream into it. Whisk the cream until it thickens and becomes stiff.
.Fold cream into mango puree and refrigerate for two hours before serving.
.Top it up with chopped almonds, pistachios and serve chilled.

1 cup Ripe Mango
5 cups Milk
1 cup Sugar
1/4 cup Almond
1/4 cup Pistachios (Pista)
3-4 Cashew Nuts (Kaju)
4-5 Saffron Strands (Kesar)
1/4 teaspoon Cardamom Powder
1 tablespoon Cornflour

METHOD
.Take a bowl and add hot water to it. Now, add almonds and pistachios to the bowl and keep them soaked for 15 minutes.
.Post soaking, drain and peel off the skin.
.Next, add the peeled almonds and pistachios to a grinder. Grind them into a coarse paste with the help of little milk. Keep it aside.
.Subsequently, in a deep pan add milk. Boil, until it reduces to half the quality.
.Add the ground almond-pistachio paste and cook for a minute.
.Next, add sugar and cook until sugar is fully dissolved. Follow up by adding cardamom powder and saffron. Let the mixture cook on a low-medium flame.
.Meanwhile, mix cornflour with a little water in a bowl (without lumps).
.Then, add the cornflour mix to the pan. Stir continuously and cook until it reaches a saucy consistency.
.Switch off the flame and let it cool completely.
.Extract the pulp from mango and mix it with the cooled mixture. Pour the mixture into the kulfi molds, close it and freeze for 6-7 hours.
.Slice and serve chilled.

2½ cups Low Fat Cream
200 grams Mangoes, peeled and chopped
1/2 teaspoon Vanilla Powder/Extract
1/2 or 1/3 cup Honey


METHOD
.Add mangoes, vanilla extract and honey to a blender. Blend this into a smooth and pulpy mixture.
.Pour cream into a bowl and whisk thoroughly until it becomes stiff and soft peaks are formed.
.Next, add pulpy mango mixture into bowl and mix everything well (Add more honey as per taste).
.Pour the mixture into a container and seal it with a lid.

.Freeze until the ice cream has set and serve.

Ingredients
2 Bowls chopped spinach (palak) leaves
1 chopped tomato
1 drumstick cut into pieces
3/4 teaspoon black pepper powder

1 teaspoon roasted cumin (jeera) powder
2 glasses of water
Salt as per taste

Method

Mix all the ingredients and boil it in a cooker  till 3 whistles. Blend and sieve and Serve hot

1/2 tsp garlic paste
1/2 tsp chilli ginger paste
1/4 cup finely chopped carrots
1/4 cup finely chopped cabbage

3/4 cup chopped coriander
1/2 cup cornflour paste

3 teaspoon cornflour mixed with 1/4 cup water
1 ltr water
Salt as per taste

Method

In a pan heat butter. Add garlic paste also Add chilli ginger paste. Mix and let it cook for 30 seconds then Add onion, carrots and cabbage. Mix and cook for 1 minute then Add 1 litre of water, Add salt per taste, Add pepper powder, Add cornflour paste. Mix and keep stirring and Let it boil for 7 minutes then Add lemon juice and fresh coriander. Let it boil for 1 more minute. Serve hot immediately.

2 Carrots, peeled and chopped
2 Tomatoes, chopped
1 Onion, peeled and chopped
2-3 Large Spinach Leaves (Paalak), chopped

1/2 teaspoon Cumin Powder (Jeera Powder)
1 pinch, Asafoetida (Hing)
1/4 teaspoon Black Pepper Powder (Kali Mirch Powder)

1-1.5 teaspoon Butter/Vegetable Oil/ Olive Oil
Black salt as required

Method

Start by adding the chopped vegetables – carrots, tomatoes, onions, spinach leaves, french beans along with garlic and water in a pressure cooker. Let it cook for 2-3 whistles or till the vegetables are fully cooked. Keep it aside and let it cool down (Do not drain). Post this, add the blanched vegetable mix to a blender and blend it. Heat butter/olive oil/ vegetable oil in a pan. Sprinkle cumin powder and salt, give it a light stir. Next, pour in the vegetable puree. Stir cook over low flame for 2-3 minutes (As per the consistency of the mixture, you can add more water or cook for a little long). Pour the wholesome soup into bowl and serve it hot.

2 cups Mix vegetables (Carrots, French Beans (Phaliyan), Cauliflower (Phool Gobhi) & Green Capsicum), finely chopped

Method

Toss in the mixed vegetable and saute for 5-6 minutes. Pour water into the pan and stir until the vegetables are well cooked. Next, add taste makers like salt and black pepper along with corn flour water. Mix it well until you notice a good thick consistency.

4 teaspoons Butter
2 Soup sticks, per person

Method

Fuljar soda recipe

Ingredients

1 lime
Ginger
Salt
Couscous
Mint leaves
Sugar syrup
Soda

Preparation

Squeeze the lime into a shot glass and add crushed ginger and bird eye chilies. Add salt as required and couscous as well. Mix the sugar syrup into it. Fill a huge glass with soda and immerse the shot glass containing the lemon mixture into it. Those who like the flavor of mint can add mint paste as well.

Regional variations

There can be regional variations to this concoction. Some people add neem leaves, cinnamon, honey and various squash items to color the drink as well as to add individual flavors. Part of the concoction is then transferred into a shot glass.

There are some other drinks also famous in south India especialy in Kerala other than fuljar soda like masala soda, kulikki surbath etc. the recipe of those drinks are also given below. you can test those recipes too if  you like fuljar soda.

Masala soda recipe

Ingredients

• 3-4 cup Club Soda/Plain Soda
• ¼ cup Brown Sugar/Regular Sugar
• ¼ cup Fresh Mint Leaves
• 2 Lemon Juice
• 1 tsp Cumin Seeds Powder
• ¼ tsp Black Pepper Powder
• ¼ tsp Chaat Masala
• ½ tsp Black Salt
• 1 tbsp Grated Ginger
• 2-3 Pinch Salt
• Ice Cubes
• Some Mint Leaves for Garnishing
• Lemon Slices for Garnishing

Instructions

Ingredients

2 cups chilled water
1/2 tsp basil seeds
1/2 lemon + a slice of lemon
1 small long green chilli slitted
1/4 tsp ginger chopped finely
few nos icecubes
For the sugar syrup:
1/4 cup sugar
1/4 cup sugar syrup

Instructions

Pick up and remove any husks or stones from the sabja seeds if any.Then take sabja seeds in a wide bowl. Add water.Soon it will start absorbing and growing in size.While pouring the water itself it starts to grow.After pouring water , let it aside for 10mins. See it is growing in size, the seeds will all become transparent jelly like coating will be formed.Strain and set aside. Add sugar to a pan, add water and let it to boil.When it is sticky and is slightly thick switch off and set aside.Now the simple sugar syrup is ready. Get all your ingredients ready.You need a shaker with lid.Now first add the simple sugar syrup to it. Then squeeze lemon to extract juice.Then add sabja seed and slitted green chilli. I didnt use the sabja seeds fully, remember this is just one serving am showing in the method. Add chopped ginger,a lemon slice. Finally add icecubes and water. Close with lid and shake rigourously for atleast 5 seconds. Now open and pour in serving glass and serve.
